When the munchies hit after smoking a J, these Date Snickers always come through. They are sweet, salty, chewy, chocolatey and ridiculously easy to make with just five ingredients. I love making these right before a chill reading session because it is that perfect combo of snack and self care.

This recipe makes about 12 to 14 stuffed dates and is naturally gluten-free and vegan if you use dairy-free chocolate.

Ingredients

• 12 to 14 large Medjool dates (unpitted for better texture but you will need to remove the pits)
• 1/4 to 1/3 cup peanut butter (smooth or crunchy, natural is best)
• 2 tablespoons roasted peanuts chopped
• 4 ounces dark chocolate or chocolate chips
• 1/2 teaspoon coconut oil (optional, helps thin the chocolate)
• Flaky sea salt (optional for topping)

Instructions

  1. Prepare the Dates
    Slice each date lengthwise down the center without cutting all the way through. Remove the pits and slightly open the date.

  2. Stuff the Dates
    Fill each date with about one teaspoon of peanut butter. You can spoon it in or pipe it using a plastic bag with a corner snipped off.

  3. Add Peanuts
    Sprinkle chopped roasted peanuts on top of the peanut butter then gently press the date halves back together to form that classic Snickers shape.

  4. Chill
    Place the stuffed dates on a parchment-lined plate or baking sheet and freeze for 30 to 60 minutes until firm.

  5. Melt the Chocolate
    In a microwave-safe bowl, melt the chocolate and coconut oil in 30-second intervals, stirring in between until smooth.

  6. Coat the Dates
    Dip each frozen date into the melted chocolate coating completely. Let excess chocolate drip off before setting it back on the parchment.

  7. Finish and Set
    While the chocolate is still wet, sprinkle a little sea salt and extra peanuts on top.

  8. Chill Again
    Freeze for another 10 to 20 minutes until the chocolate hardens. Store in an airtight container in the fridge or freezer.
